SMALL PIECES CANNOT BE SAME-DAY. Cutting fresh, warm meat into small pieces is a serious injury risk for our cutters. The carcass must chill in the cooler AT LEAST 12 HOURS — small pieces are READY NO SOONER THAN 24 HOURS after slaughter. COST IS BY CARCASS WEIGHT, SET AFTER SLAUGHTER — not part of the slaughter fee, PAID BEFORE PROCESSING.
PRICED BY CARCASS WEIGHT. The cutting fee can only be calculated AFTER SLAUGHTER, once the carcass is weighed. It is separate from the slaughter fee and is PAID IN FULL BEFORE YOUR MEAT IS RELEASED.
