Cut & wrap: +$2/lb of hanging weight, billed at pickup. Halves and quarters come from the animal we slaughter for the store that week — you tell us your size preference, we match you to the closest. A whole animal is selected to your spec. Actual hanging weight is set after slaughter; final price is your portion’s real hanging weight × the $/lb, plus the cut & wrap, minus your deposit. Your deposit reserves the order — we confirm your animal and cut week shortly after booking.

The U.S. cattle herd is the smallest since the 1950s. Live cattle are trading near record highs — about $2.56/lb on the hoof, and the young baby cows we raise cost even more, around $3.63/lb live — before a single cut is made.

And we sell baby cow — true young veal — which costs more than beef everywhere: USDA's weekly veal report shows packers paying producers about $5.24/lb (early 2025) for the bare hanging carcass alone — before slaughter, cutting, wrapping, or anyone's labor.

USDA's own survey of farms selling custom beef direct to families (Q1 2026) puts the national average at $12.70/lb hanging for a whole, $12.63 for a half, and $13.52 for a quarter — ours runs $10–$12/lb, below that average. Our butcher (30 years on the saw) cuts and wraps it to your sheet.

Pay a small deposit today; the balance at pickup is simply the real hot-carcass weight × the $/lb, minus your deposit, plus the cut & wrap fee. Our team confirms your cut date after booking.
