Our butcher (30 years on the saw) cuts and wraps it to your sheet.
Pay a small deposit today; the balance at pickup is simply the real hot-carcass weight × the $/lb, minus your deposit, plus the cut & wrap fee. Our team confirms your cut date after booking.
